Ground Chicken Burgers 3 Ways
There’s nothing quite like a burger hot off the grill and loaded up with fresh toppings. This one recipe can be used for 3 different burgers – Tex Mex, Berbere Spice, or Classic. Are you feeling zesty, spicy, or basic today? If it’s party time, just roll the patties out a bit smaller for the best chicken sliders you’ve ever had!

Chef’s Tips:
- Burgers patties can be prepared up to 24 hours ahead of time and stored, covered, in the refrigerator until ready to grill.
- To make 2 different styles (24 burgers or 48 sliders), double the Burger Base ingredients. To make all 3 styles (36 burgers or 60 sliders), triple the Burger Base ingredients.
Ingredients:
For All Burger Bases:
- 2 lbs (900 g) Sargent Farms Ground Chicken
- ½ cup (54 g) bread crumbs
- 1 egg, lightly beaten
- ½ tsp (3 g) salt
- ½ tsp (1 g) ground pepper
For the Classic Chicken Burgers:
- 2 cloves of garlic, finely minced
- 1 tbsp (15 ml) yellow mustard
- 12 hamburger buns, or 24 slider buns
For the Tex Mex Burgers:
- ¼ cup (32 g) finely minced red bell pepper
- 2 cloves of garlic, finely minced
- 1 jalapeño, finely minced
- 2 tsp (8 g) Tex Mex seasoning
- 1 cup (50 g) lightly crushed corn chips
For the Berbere Spice Burgers:
- 1 clove of garlic, minced
- 1 tbsp (6 g) minced ginger
- 1 tsp (2 g) chili flakes
- 1 tsp (3 g) paprika
- ½ tsp (2 g) ground cinnamon
- ½ tsp (1 g) ground cardamom
- ¼ tsp (1 g) ground nutmeg
Directions:
- Line a medium baking sheet with parchment paper.
- Place burger base ingredients plus desired burger type ingredients in a large bowl (if making the Tex Mex burgers, omit bread crumbs from the base recipe). Gently mix until combined.
- Divide mixture into 12 equal balls for regular burgers or 24 balls for sliders. Place on prepared baking sheet and gently flatten into ½ inch thick burger patties or a ¼ inch thick patties for sliders.
- Cover with plastic wrap and place in the refrigerator to chill for 25 to 30 minutes.
- Preheat grill to medium-high heat and grease well.
- Place burgers on preheated grill and cook with the lid closed for 5-7 minutes per side (3-4 minutes per side for sliders) flipping occasionally or until cooked through. Place burger patty on bottom bun. Top with desired garnishes and serve.
