Ingredients:

1 lb Sargent Farms Lean Ground Chicken

1/2 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 egg

2 garlic cloves, minced     

1 teaspoon dried oregano

1/2 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

4 oz/114g mozzarella cheese, cut into small cubes

1 cup marinara sauce

Fresh basil leaves, for garnish (optional)

 

Directions:

  1. Preheat the oven to 375°F (190°C); line a baking sheet with parchment paper and set aside.
  1. Combine ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, dried oregano, dried basil, salt, and black pepper in a large mixing bowl. Mix well until the ingredients are evenly combined.
  1. Scoop out the mixture by the tablespoonful and form it into a ball. Press a cube of mozzarella cheese into the center, covering it with the chicken mixture.
  1. Arrange the meatballs onto the prepared baking sheet, spacing them apart. Bake for 20 to 25 minutes or until golden brown and cooked through with an internal temperature of 165°F (74°C).
  1. Meanwhile, warm the marinara sauce in a small saucepan over medium heat.
  1. Serve the Cheesy Chicken Meatballs hot with the marinara sauce on the side, garnished with fresh basil leaves, if desired.
