Quick Chicken Shawarma

INGREDIENTS:

  • 1 tbsp (15 ml) olive oil
  • 1 small onion, finely chopped
  • 1 tsp (4 g) Mediterranean seasoning
  • ½ tsp (2 g) ground cumin
  • ¼ tsp (1 g) ground cinnamon
  • ¼ tsp (1 g) ground cardamom
  • 1 portion shredded chicken
  • 1 tbsp (15 ml) lemon juice

To Serve:

  • 1 cup (200 g) seeded and finely chopped tomatoes
  • 1 cup (125 g) seeded and finely chopped cucumber
  • ½ cup (65 g) finely chopped red onion
  • ¼ cup (6 g) chopped parsley
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (15 ml) freshly squeezed lemon juice
  • ½ tsp (3 g) salt
  • 2 tbsp (30 ml) tahini sauce
  • 4 large pitas

INSTRUCTIONS:

  1. Heat oil in a medium pan over medium-high heat, add onion and cook for 3-4 minutes. Stir in spices and cook for 1 minute. Reduce heat to medium and stir in portioned chicken. Cook, stirring, for 1-2 minutes or until heated through. Remove from heat and stir in lemon juice.

To Serve:

  1. In a medium bowl, mix together tomatoes, cucumber, red onion, parsley, oil and lemon juice. Spread an even amount of tahini sauce on each pita, top with chickenmixture and salad mixture.
