Sweet and Spicy Slow Cooker “Rotisserie” Chicken

A whole chicken that takes just 15 minutes to prepare and tastes like it just came off the rotisserie? It sounds like magic, but it’s all thanks to your slow cooker. Just blend the seasonings and rub them into the chicken, chop your vegetables, and let them cook. Start it early in the day and it’s ready to eat when you are!

Cook Time: 3-6 hours

Chef’s Tip:

  • Instead of using vegetables as a rack in the slow cooker, you can make six 2-inch (5 cm) diameter balls of aluminum foil and place on the bottom of the slow cooker. Position chicken directly on foil and cook according to recipe.

Ingredients:

For the Sweet and Spicy Rub:

  • 2 tbsp (28 g) dark brown sugar
  • 2 tsp (4 g) smoked paprika
  • 1 tsp (6 g) salt
  • 1 tsp (3 g) garlic powder
  • 1 tsp (2 g) chili powder
  • 1 tsp (1 g) oregano
  • ½ tsp (1 g) cayenne pepper
  • ½ tsp (1 g) freshly ground black pepper

For the Chicken:

  • 2 tbsp (30 ml) olive oil
  • 1 whole (2-3 lb/0.9-1.3kg) Sargent Farms Whole Chicken
  • 1 recipe sweet and spicy rub
  • 2 large carrots, peeled and cut in half
  • 1 onion, peeled, and halved
  • 3 cloves of garlic, crushed

Directions:

For the Sweet and Spicy Rub:

  1. Whisk together all rub ingredients in a small bowl. Set aside until needed.

For the Chicken:

  1. Drizzle olive oil over the Sargent Farms Whole Chicken. Season the outside and inside of the chicken with prepared spice rub.
  2. Place carrots, onions, and garlic in the bowl of a slow cooker then place chicken on top of vegetables. (The vegetables serve as a “rack” so chicken does not cook in accumulating juices.) Cover and cook on high for 3-4 hours or on low for 5-6 hours.
  3. Remove chicken to a cutting board or serving platter, tent with foil and let rest for 10-15 minutes before serving.
  4. Serve chicken with choice of sides or cool and use for meals later in the week.
